Pâtisserie & Café — Saint-Germain, depuis 1962
Macarons matured for seventy-two hours, entremets layered at dawn, and a salon de thé washed in morning light on Rue Jacob.
Open today · 8:00 — 19:30
01 — La Maison
In 1962 Hélène Marchand opened a twelve-seat salon on Rue Jacob with a copper basin, a borrowed oven and her grandmother’s almond flour. Today her granddaughter, chef pâtissière Camille Marchand, still ages every macaron for three days so the shell turns crisp, then tender, then gone.
Nothing here is rushed. Almonds are ground in-house each Monday, butter arrives from Poitou-Charentes, and every ganache rests overnight before it meets a shell.
